Here’s a recipe for Mango Sticky Rice, a delicious Thai dessert:
Ingredients:
- 1 cup glutinous rice (also called sticky rice or sweet rice)
- 1 1/2 cups coconut milk (divided)
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- 1 tablespoon toasted sesame seeds (optional)
Instructions:
- Prepare the Sticky Rice:
- Rinse the glutinous rice several times under cold water until the water runs clear.
- Soak the rice in water for at least 4 hours, or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes, or until the rice is tender and sticky.
- Make the Coconut Sauce:
- While the rice is steaming, combine 1 cup of coconut milk, sugar, and salt in a saucepan over medium heat.
- Stir until the sugar dissolves and the mixture is smooth. Do not let it boil.
- Once the rice is cooked, transfer it to a bowl and pour the coconut milk mixture over the rice. Stir well to combine.
- Cover the bowl and let it sit for about 15-20 minutes to allow the rice to absorb the coconut milk.
- Prepare the Topping:
- In the same saucepan, heat the remaining 1/2 cup of coconut milk until warm.
- You can add a little sugar or salt to taste if desired. This will be used as a topping for the rice.
- Assemble the Dish:
- Place a portion of sticky rice on a plate.
- Arrange the mango slices beside the rice.
- Drizzle the warm coconut milk over the rice.
- Sprinkle with toasted sesame seeds if using.
- Serve and Enjoy:
- Serve the Mango Sticky Rice warm or at room temperature. It’s a perfect dessert for any occasion!
