Here’s a recipe for Mango Sticky Rice, a delicious Thai dessert:

Ingredients:

  • 1 cup glutinous rice (also called sticky rice or sweet rice)
  • 1 1/2 cups coconut milk (divided)
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted sesame seeds (optional)

Instructions:

  1. Prepare the Sticky Rice:
  • Rinse the glutinous rice several times under cold water until the water runs clear.
  • Soak the rice in water for at least 4 hours, or overnight.
  • Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes, or until the rice is tender and sticky.
  1. Make the Coconut Sauce:
  • While the rice is steaming, combine 1 cup of coconut milk, sugar, and salt in a saucepan over medium heat.
  • Stir until the sugar dissolves and the mixture is smooth. Do not let it boil.
  • Once the rice is cooked, transfer it to a bowl and pour the coconut milk mixture over the rice. Stir well to combine.
  • Cover the bowl and let it sit for about 15-20 minutes to allow the rice to absorb the coconut milk.
  1. Prepare the Topping:
  • In the same saucepan, heat the remaining 1/2 cup of coconut milk until warm.
  • You can add a little sugar or salt to taste if desired. This will be used as a topping for the rice.
  1. Assemble the Dish:
  • Place a portion of sticky rice on a plate.
  • Arrange the mango slices beside the rice.
  • Drizzle the warm coconut milk over the rice.
  • Sprinkle with toasted sesame seeds if using.
  1. Serve and Enjoy:
  • Serve the Mango Sticky Rice warm or at room temperature. It’s a perfect dessert for any occasion!
