Singapore Fried Rice Delight

Here’s a delicious recipe for Singaporean-style rice, often known as Singapore Fried Rice. This dish is a flavorful fusion of rice, vegetables, and proteins, seasoned with a blend of spices and sauces.

Singapore Fried Rice

Ingredients:

  • For the Rice:
  • 2 cups basmati or jasmine rice
  • 4 cups water
  • 1 tablespoon vegetable oil
  • Salt to taste
  • For the Stir-Fry:
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 bell pepper, finely chopped
  • 1 carrot, finely chopped
  • 1/2 cup green peas
  • 2 eggs, beaten
  • 200g shrimp, chicken, or tofu (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon curry powder
  • 1 teaspoon chili paste or sauce (adjust to taste)
  • 2 green onions, chopped
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving

Instructions:

  1. Cook the Rice:
  • Rinse the rice under cold water until the water runs clear.
  • In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and 1 tablespoon of vegetable oil.
  • Add the rice, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
  • Fluff the rice with a fork and let it cool. For best results, use day-old rice.
  1. Prepare the Stir-Fry:
  • In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat.
  • Add the chopped onion and sauté until translucent.
  • Add the garlic and ginger, and cook for another 1-2 minutes until fragrant.
  • Add the chopped bell pepper, carrot, and green peas. Stir-fry for about 5 minutes or until the vegetables are tender.
  • Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  • If using shrimp, chicken, or tofu, add it now and cook until fully done.
  1. Combine and Season:
  • Add the cooked rice to the pan and mix well with the vegetables and eggs.
  • Pour in the soy sauce, oyster sauce (if using), curry powder, and chili paste. Stir to combine and heat through.
  • Adjust the seasoning with more soy sauce or salt if needed.
  1. Serve:
  • Garnish with chopped green onions and fresh cilantro, if desired.
  • Serve hot with lime wedges on the side for an extra burst of flavor.

  • Feel free to customize the vegetables and protein according to your preference.
  • Adjust the amount of chili paste to control the spiciness level.
  • Leftover rice works best for this recipe as it is less sticky and fries better.
