Here’s a delicious recipe for Singaporean-style rice, often known as Singapore Fried Rice. This dish is a flavorful fusion of rice, vegetables, and proteins, seasoned with a blend of spices and sauces.
Singapore Fried Rice

Ingredients:
- For the Rice:
- 2 cups basmati or jasmine rice
- 4 cups water
- 1 tablespoon vegetable oil
- Salt to taste
- For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 bell pepper, finely chopped
- 1 carrot, finely chopped
- 1/2 cup green peas
- 2 eggs, beaten
- 200g shrimp, chicken, or tofu (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon curry powder
- 1 teaspoon chili paste or sauce (adjust to taste)
- 2 green onions, chopped
- Fresh cilantro for garnish (optional)
- Lime wedges for serving
Instructions:
- Cook the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and 1 tablespoon of vegetable oil.
- Add the rice, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
- Fluff the rice with a fork and let it cool. For best results, use day-old rice.
- Prepare the Stir-Fry:
- In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the chopped onion and sauté until translucent.
- Add the garlic and ginger, and cook for another 1-2 minutes until fragrant.
- Add the chopped bell pepper, carrot, and green peas. Stir-fry for about 5 minutes or until the vegetables are tender.
- Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- If using shrimp, chicken, or tofu, add it now and cook until fully done.
- Combine and Season:
- Add the cooked rice to the pan and mix well with the vegetables and eggs.
- Pour in the soy sauce, oyster sauce (if using), curry powder, and chili paste. Stir to combine and heat through.
- Adjust the seasoning with more soy sauce or salt if needed.
- Serve:
- Garnish with chopped green onions and fresh cilantro, if desired.
- Serve hot with lime wedges on the side for an extra burst of flavor.
Tips:
- Feel free to customize the vegetables and protein according to your preference.
- Adjust the amount of chili paste to control the spiciness level.
- Leftover rice works best for this recipe as it is less sticky and fries better.
