Pancakes with berries and maple syrup

  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for cooking

Instructions:

  1. Mix Dry Ingredients:
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  1. Mix Wet Ingredients:
  • In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix well.
  1. Combine Wet and Dry Ingredients:
  • Pour the wet ingredients into the dry ingredients. Stir until just combined. The batter should be slightly lumpy; do not overmix.

  • Heat a griddle or non-stick skillet over medium heat. Lightly grease it with butter or oil.
  1. Cook the Pancakes:
  • Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook until the other side is golden brown, about 1-2 minutes more.
  1. Serve:
  • Serve warm with your favorite toppings like maple syrup, fresh berries, whipped cream, or butter.
