Classic Meatloaf Recipe

Ingredients:

  • For the Meatloaf:
  • 1 lb (450g) ground beef (80% lean)
  • 1 lb (450g) ground pork (or use all beef)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • For the Glaze:
  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar (optional)

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.
  1. Mix the Meatloaf:
  • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix everything together with your hands until just combined. Be careful not to overmix, as this can make the meatloaf dense.
  1. Shape the Meatloaf:
  • Shape the mixture into a loaf shape and place it in the prepared loaf pan or on the lined baking sheet.
  1. Prepare the Glaze:
  • In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Spoon or brush the glaze evenly over the top of the meatloaf.
  1. Bake:
  • Place the meatloaf in the preheated oven and bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C). If you notice the glaze browning too quickly, cover the meatloaf loosely with aluminum foil.
  1. Rest and Serve:
  • Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute, making the meatloaf more tender.
  1. Serve:
  • Slice the meatloaf and serve with mashed potatoes, gravy, or your favorite vegetables.

Tips:

  • For extra moisture: Add grated carrot or zucchini to the meat mixture.
  • For a smoky flavor: Use smoked paprika or add a bit of BBQ sauce to the glaze.
  • Leftovers: Meatloaf makes great sandwiches the next day!
