Ingredients:

For the Chicken Wings:
  • 2 pounds chicken wings (drumettes and flats separated)
  • 1 tablespoon baking powder (not baking soda)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
For the Buffalo Sauce:
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon honey or brown sugar (optional, for a touch of sweetness)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce (optional)
For Serving:
  • Blue cheese dressing or ranch dressing
  • Celery sticks
  • Carrot sticks

Instructions:

  1. Prepare the Chicken Wings:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack with non-stick cooking spray.
  • Pat the chicken wings dry with paper towels. The drier the wings, the crispier they will be.
  • In a large bowl, toss the wings with baking powder, salt, pepper, garlic powder, and onion powder until evenly coated.
  1. Bake the Wings:
  • Arrange the wings in a single layer on the prepared wire rack.
  • Bake in the preheated oven for 40-45 minutes, turning them halfway through, until the wings are golden brown and crispy.
  1. Make the Buffalo Sauce:
  • While the wings are baking, prepare the Buffalo sauce. In a small saucepan, melt the butter over medium heat.
  • Stir in the hot sauce, honey or brown sugar (if using), garlic powder, and Worcestershire sauce. Mix until well combined and heated through. Remove from heat.
  1. Coat the Wings:
  • Once the wings are done, remove them from the oven and transfer them to a large bowl.
  • Pour the Buffalo sauce over the wings and toss until they are evenly coated.

  • Serve the Buffalo wings hot with blue cheese or ranch dressing, along with celery and carrot sticks on the side.

Tips:

  • Air Fryer Option: For extra crispy wings, you can cook them in an air fryer at 400°F for 20-25 minutes, shaking the basket halfway through.
  • Extra Spicy: For spicier wings, add a pinch of cayenne pepper to the Buffalo sauce.
  • Milder Wings: If you prefer a milder sauce, reduce the amount of hot sauce and increase the butter.
