Authentic Chinese Fried Rice

Classic Chinese Fried Rice

Ingredients:

  • 3 cups cooked rice (preferably day-old and chilled)
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 1/2 cup cooked chicken, shrimp, or pork, diced (optional)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare the Rice:
  • Break up any clumps in the cooked rice to ensure it’s fluffy and separated.
  1. Cook the Eggs:
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  1. Sauté Aromatics:
  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion and garlic, and sauté until fragrant and the onion becomes translucent, about 2-3 minutes.
  1. Add Vegetables and Meat:
  • Add the mixed vegetables and any cooked meat you’re using. Stir-fry for about 3-4 minutes until the vegetables are tender.
  1. Add Rice and Sauces:
  • Add the cooked rice to the skillet and stir-fry, mixing everything together. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to coat the rice evenly.

  • Add the scrambled eggs back into the skillet and mix them into the rice. Stir in the chopped green onions.
  1. Season:
  • Taste the fried rice and season with salt and pepper as needed.
  1. Serve:
  • Serve the fried rice hot, garnished with additional green onions if desired.
