Vegan Chickpea Curry

Here’s a simple and delicious recipe for Vegan Chickpea Curry:

Ingredients:

  • 1 tablespoon coconut oil or olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1-2 tablespoons curry powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk (full-fat for creaminess)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice or lime juice
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving

Instructions:

  1. Sauté the Aromatics:
  • Heat the coconut oil in a large pan over medium heat.
  • Add the chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
  • Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.

  • Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) to the pan.
