Ingredients:

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Italian style preferred)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup olive oil (for frying)
  • For the Sauce:
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • For Assembly:
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Prepare the Chicken:
  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness (about 1/2 inch thick).
  • Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, 1 cup grated Parmesan, garlic powder, oregano, salt, and pepper.
  • Dredge each chicken breast in the flour, then dip in the eggs, and finally coat with the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they stick.
  1. Cook the Chicken:
  • Heat 1/4 cup of olive oil in a large skillet over medium heat.
  • Fry the chicken breasts for about 3-4 minutes on each side, until golden brown and crispy. You may need to do this in batches depending on the size of your skillet.
  • Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
